Luchi / Poori / Indian Deep Fried Flatbread

  • All Purpose Flour – 4 cups
  • Ghee / Oil – 3 tbsp + for frying
  • Warm Water – 1 3/4 Cup
  • Salt

Makes : 24 – 26

Method

1. Take the flour in a large bowl, add salt and oil , mix well with fingertips or spatula.

2. Add a little water at a time to make a soft, smooth dough. If you feel the dough is not sticking to your palm, then its ready.wpid-20140430_170116.jpg

3. Cover with moist cloth and allow the dough to rest for about 1/2 an hour.

4. After 1/2 an hour knead the dough again and divide it to small balls (approx 1 inch diameter).wpid-20140430_170415.jpg

7. Serve hot with Dum aloo or Chholar dal.

Peas Kachori or Hare Matar Ki Kachori

Ingredients

For dough:

  • All purpose flour(Maida) – 1 1/2 cups
  • Salt – 1/2 tsp 
  • Ghee / Oil – 2 tbsp 
  • Water to knead
  • Oil to deep fry

For filling:

  • fresh/frozen Green Peas – 2 cups 
  • grated Ginger – 1 tsp 
  • Green chillies,finely chopped – 
  • Garam Masala – 1 1/2 tsp
  • Roasted Cumin Powder – 1 tsp
  • Salt to taste
  • Sugar – 1/4 tsp

1. Sieve flour (maida)  in a bowl, add the salt and ghee and mix well and knead into a smooth dough using sufficient water.

2. Cover with a moist cloth and keep aside for 30 minutes.

3. Grind peas along with  green chilies and ginger together to form a paste.

4. Heat some mustard oil and put the paste. Add salt , sugar and mix well. Sauté the paste for about 5-10 minutes on low flame till the water evaporates.

5. Remove from the flame and keep aside to cool.

6. Add the garam masala and cumin powder, mix well and divide the mixture into equal portions (approx 12 – 16) and keep aside.

7. Take small balls from the dough and place a portion of the stuffing at the center, cover and roll out lightly using a rolling-pin.

8. Heat the oil in a kadai and deep fry kachoris on medium heat till golden brown.

9. Serve hot with your favourite sabzi or chutney.
