Fish Stuffed Paratha

 For the Dough

  • All Purpose Flour – 2 cups
  • Oil – 3 tbsp
  • Salt
  • Warm Water , to knead

For the Filling   

  • Tilapia Filet – 5 (1.3 lb)
  • Oil – 8-10 tbsp
  • Onion paste , large – 2
  • Ginger paste – 2 inch
  • Garlic paste –  4 cloves
  • Boiled Potato  , medium – 3
  • Turmeric powder – 1 1/2 tsp
  • Red Chili powder – 2 tsp
  • Garam Masala – 1 tbsp
  • Sugar – 1/2 tsp
  • Salt , to taste

Filling Yields : 18 Parathas

Method

1. Add all ingredients for the dough in a large bowl except water and mix thoroughly.

2. Now add water little by little until it forms a soft pliable dough.

3. Cover with a moist cloth and set aside for 20-30 minutes.

4. Boil fish and potato separately and mash them.

5. Heat oil in a large pan, add onion-ginger-garlic paste and fry until oil starts to separate from the sides.

6. Now add mashed fish , salt , sugar , turmeric and red chili powder , combine well and fry until oil starts to come out from the sides.

8. Make big lemon size balls from the dough ( 5-6 ).

9. With the help of a rolling pin make a thick circle of about 5 inch diameter.

10. Take 2 spoonful of filling and spread it on paratha surface.wpid-20140721_182113.jpg

11. Now cut one side of the paratha and roll it to make a cone shape.wpid-20140721_182159.jpg

12. Now place it on your palm and press it gently to give it a round shape.wpid-20140721_182649.jpg

14. Heat a tawa or non stick pan , place the stuffed parathas.

15. Cook both sides on medium heat until brown spots starts to appear.

16. Pour 1 tsp of oil or ghee and cook both sides.wpid-20140721_184550.jpg

17. Serve hot with ketchup or pickle or raita.

 

** You can make fish samosas or fish cutlets using the same filling. **

Dim er kalia / Egg Curry

  • Hard Boiled Egg – 3-4
  • Onion , chopped – 2 , medium
  • Ginger , grated- 1″piece
  • Garlic , grated – 3 cloves
  • Tomato , chopped –  1 , medium
  • Turmeric Powder  – 2 tsp.
  • Red chilli powder –  2 tsp.
  • Salt, to taste
  • Sugar – 1 tsp.
  • Mustard Oil –  2-3 tbsp.
  • Ghee – 1 tbsp
  • Whole garam masala – 2 cardamoms, 4 cloves and 2(1″) sticks of cinnamon
  • Garam Masala powder – 2 tsp
  • Tomato ketchup – 3 tbsp
  • Red Chili Sauce – 1 tbsp

Method

1. Boil the egg in enough water. Then keep the eggs in cold water and take the shells out.wpid-20140525_123455.jpg

2. Marinate the eggs with salt , red chili powder and a pinch of turmeric. Prick them with a knife.wpid-20140525_123708.jpg

3. Heat oil in a pan and fry the eggs till light brown.Remove the eggs and keep aside.wpid-20140525_124744.jpg

4. In  the same oil, add whole garam masalas. When they start to splutter, add thinly sliced onions and sugar , fry until it turns brown.wpid-20140525_125805.jpg

5. Add grated ginger-garlic , fry for 30 sec.

6. Add chopped tomatoes , turmeric powder, red chili powder and salt , fry until oil starts to separate.wpid-20140525_125846-1.jpg

7. Add 1 cup water and let it bring to boil. Then add fried eggs , tomato ketchup and red chili sauce. Cook until gravy thickens.wpid-20140525_130711.jpg

Chicken Curry

  • Chicken – 3 lb
  • Onions , chopped – 1 1/2 small
  • Onions , paste – 1 1/2 small
  • Oil – 4-5 tbsp
  • Cinnamon stick – 2 inch
  • Cardamom pods – 3-4
  • Cloves – 3-4
  • Turmeric Powder – 2 tsp
  • Red chili Powder – 1 1/2 tsp
  • Garlic cloves – 3-4
  • Ginger  – 1 1/2 ich
  • Tomato – 1 large
  • Coriander Powder – 1 tsp
  • Garam masala powder – 2 tsp
  • Ghee – 1 tbsp
  • Sugar – 1/2 tsp
  • Salt, to taste

Method

1. Marinade chicken with salt and turmeric for 1/2 an hour.wpid-20140426_131917.jpg

2. Make a fine paste with onion , garlic , ginger and tomato.

3. Heat oil in a heavy bottomed pan , add whole spices.

4. When they begin to splutter add chopped onion , fry until golden brown.

5. Now add onion mix paste ( with ginger , garlic and tomato ) , salt , sugar , turmeric powder , red chili powder and coriander powder , fry until oil starts to separate. Stir frequently.wpid-20140426_132012.jpg

6. Add marinated chicken and fry for 4-5 minutes. Sprinkle water if necessary. Stir frequently.wpid-20140426_132442.jpg

7. Add enough water, when comes to boil , cover and cook over medium-low heat until done, about 15-20 minutes.wpid-20140426_133524.jpg

9. Serve hot with roti , paratha or rice.
